We are who we are

Imma the bakery is less of a shop and more of a laboratory for the senses. We believe that bread is a living document; it records the weather of the Oxfordshire fields, the heritage of the stoneground grain, and the rigorous patience of the fermentation.

Ovens are a place where abstract ideas become physical nourishment. At Imma, we don’t just bake to feed; we bake to preserve a dialogue with the land and to honour the slow, honest rhythm of the bakers trade. Every loaf is an invitation to slow down and truly taste the integrity of the grain

We started in 2018 with a restaurant in Mexico, and as things moved and changed, we found our way through the dough. Baking has been such a great experience that has allowed us to become part of a lovely community.

We light our ovens every morning, knowing that someone is going to eat what we make. That's the most intimate human connection in life, to sit together and share the loaf.

The word of the crust

I. To those whose hands are dusted with flour and whose hearts pulse with the ferment: through history, we have been told that bread is a commodity; that eating is not as primordial as our stomachs believe; that time is money and that using it to build a connection with our food is a merely a waste. We have been told that perfection is measured by the symmetry found in a steel tin.

Our Poiint of view

  • As bakers, we come in and turn our ovens on every day, there is a quiet, rhythmic obsession that defines our lives: the repetition of yesterday

    There's not a desire for greatness but the single expectation of doing it a little bit better than the day before, our work is never fininshed.

  • Bakeries are one of the last remaining common grounds in our communities. In a world that is increasingly digital and disconnected, baking provides something undeniably real. When gets a loaf from us, we become part of a lineage of artisans who have always been the pulse of their villages

  • We have pledged an oath to the fire and the dough; to be the stewards of the grain and the keepers of the flame. To not bake for the sake of production, but for the sake of communion. Above all, to be of service, to nourish the body, to touch the soul, and to make the bakery an honest beating heart of our community.
